Ingredients
- SMALL POTATOES, 3/4 pound
- BRATWURST SAUSAGES, 4
- ZUCCHINI, 1, cut into one-inch wedges
- ONION, 1, cut into one-inch wedges
- CHERRY TOMATOES, 1 cup
- OLIVE OIL, 1 tablespoon
- MIXED HERB SEASONING, 1 tablespoon
- DIJON MUSTARD, 2 tablespoons
- MAPLE SYRUP, 1 tablespoon
Directions
- Preheat oven to 350°F.
- Prepare potatoes, zucchini, onion, and cherry tomatoes, and place on a large shallow pan or baking sheet with sides.
- In a small bowl whisk together oil, seasoning, mustard and syrup.
- Drizzle half this mixture over the vegetables and toss to coat. Move to one side of the pan.
- Place sausages on the other side of the pan and brush lightly with a little sauce.
- Roast for 40 – 45 minutes until potatoes and sausages are cooked through and golden.
- Drizzle with remaining sauce before serving.
