Cheesy Sausage Biscuit Muffins

I got this simple recipe from Facebook.

It called for flaky layered biscuits, which I couldn’t find, so I substituted Pillsbury's jumbo biscuits, using half of each biscuit dough per muffin.

It also called for plain sausage, but I’d bought a huge amount of Italian sausage at Costco (you know how that goes), so that’s what I used.

Then, instead of just using cheddar cheese, I mixed in Mozzarella because after all, the muffins had morphed into Italian.

These are so easy to make, and so delicious.

Ingredients
  • PILLSBURY BISCUITS, 1 ten-count can
  • ITALIAN SAUSAGE , ½ pound in casings
  • MOZZARELLA CHEESE, ½ cup shredded
  • CHEDDAR CHEESE, ½ cup shredded
Directions
  1. Preheat oven to 400.
  2. Mix uncooked sausage and cheese gently until well blended. Shape into 20 balls of equal size.
  3. Remove biscuits from cans and separate each biscuit into two layers, making 20 total biscuit layers. Press one layer of biscuit into cup of lightly greased mini-cupcake pan. Repeat with remaining layers.
  4. Place sausage-cheese ball in each biscuit cup. Bake for 8 to 10 minutes or until biscuits are browned and sausage balls are bubbly.

English Muffin Pizza

I’ve always wanted to do this, but for some reason it seemed too easy to do and I kept putting it off because in my head, I always thought “I can do this any time I want to,” which as you know, never happens.

Finally got my act together. And I was right … it’s so easy.

Ingredients

  • ENGLISH MUFFINS, cut in half, as many as you want
  • BUTTER
  • MARINARA SAUCE, about a cup, heated
  • SAUSAGE, 1 large (Italian, breakfast, summer, your choice), sliced thin
  • MARINATED ARTICHOKES, chopped, as many as you want
  • MOZZARELLA CHEESE, shredded

Directions

  1. Toast the English muffins and butter the cut side.
  2. Spoon on about 2-3 tablespoons of marinara sauce.
  3. Layer some of the artichoke hearts on top.
  4. Lay 2-3 sausage slices on top of the artichokes.
  5. Cover generously with mozzarella cheese.
  6. Toast in a broiler oven until the mozzarella is bubbly.

Sweet & Spicy Soy Beans

Here’s a quick snack that’s good for you and will warm the top of your head on a cold winter day.
Your local supermarket should have frozen bags of boiled soy beans (edamame) in the pod. They’re usually in the vegetable or Asian foods section of the freezer.
While you’re there, head over to the Asian food aisle and grab a bottle of Thai Sweet Chili Sauce. I use the Mae Ploy brand that’s made with sugar, chili pepper, vinegar and garlic. It’s sweet and it’s got a nice little kick.
To prepare, reheat the soy beans as directed on the package. When they’re done, drain off most of the water, leaving a few tablespoons in the pot. Pour in a half-cup or so of the sweet chili sauce, mix it all up, then continue on low heat until most of the liquid has evaporated.
Start eating. Take a pod into your mouth and with your teeth, pop the beans out of the pod, Discard the pod, which has surrendered its entire flavor to you, and reach for another.
It’s addictive.
